The edamame kind of look like little bugs, don’t they?

This recipe had pretty good flavor. However, it wasn’t quite good enough that I’ll make it again.

I wanted to try this one because it contained two vegetables I had never cooked with: napa cabbage and edamame (baby soy beans in the pod). Now, what to do with that leftover cabbage …

Healthy, quick and delicious? Yes!

These open-faced veggie melts are going directly on the Make Again list.

Dad, BP and I all gave these two thumbs up, and the portobellos made the meal super filling, too. This is a great way to get your vegetables.

I know it sounds a little funny, but this was unexpectedly very good. Even BP agreed – but only after he told me he was not expecting a meal that tasted good (before he tasted it). Ha!

The combination of the Italian sausage with the pasta and Parmesan is, obviously, a no-brainer. But it’s the addition of the raisins, pine nuts and chard that made this dish really worth the time.
