111. Twenty-Minute Chicken

If you like mushrooms – and I mean really, really like mushrooms – you’ll like this. It also has a healthy topping of mozzarella cheese on top, and that always makes supper better.

It’s simple and quick to put together, and it tastes good. The name is a bit misleading, in my opinion. I buy big chickens, and it takes longer than 20 minutes for this dish to cook. But, it’s so easy, I don’t mind the extra time.

I served it with a made-from-a-box porcini risotto.

82. slow-cooked turkey dinner

Ho-hum. Meat, vegetables and cream of mushroom soup.

And I know the title of the recipe says “turkey,” but the grocery store didn’t have any boneless, skinless turkey thighs, so I used chicken instead.

On the plus side, the onion and carrots were from BP’s garden.

35. one-pot paprika chicken with potatoes

Simple and easy, this was a very good meal that I will make again.

The red pepper added to the vegetables gave it just the right boost of flavor, and the chicken came out just perfect.

As an added bonus, I used my new old cast iron Dutch oven! It was super swell. If you don’t have one, I suggest you find one – or find a really, really nice coworker who is willing to give you one.

BP and I were split right down the middle on this recipe. I really liked it. He told me he’d rather have eaten a peanut butter sandwich.

2. chicken portobello with mashed red potatoes

I know this doesn’t look all that appetizing in the photo, but looks are deceiving. It was delicious. The creamy sage sauce gave the chicken a really good flavor, and even though the portobello mushrooms made the sauce look purple, they were a really nice addition to the meal.

As an added bonus, I used my brand new KitchenAid stand mixer (a Christmas gift from my dad – so sweet!) to mash up the potatoes. This machine is awesome. I was impressed by its ability to turn chicken broth, cream cheese and boiled potatoes into mashed potato goodness within seconds. Amazing.
