When God created the avocado, He knew what He was doing. It is the perfect texture and has just the right flavor to make any meal better.

BP requested these yummy sandwiches, which I had made once before a couple of years ago.

These sandwiches are fresh tasting with a little bit of a kick from the jalapenos, red onion and pepper jack cheese. Definitely a good, fresh meal to enjoy prior to three days of Thanksgiving lunches and suppers coming up this week!

77. salsa sloppy joes

Supper really couldn’t get much easier than this.

I had some salsa in the ‘fridge that I wanted to use up, and so this recipe caught my eye when I was flipping through my latest magazine.

These sandwiches definitely were sloppy, and they weren’t as good as the turkey sloppy joes I made earlier this year, but they were still tasty. And super, super easy.

BP thinks the salsa I buy is already too sweet, so I left out the tablespoon of brown sugar the recipe calls for.

Delicious! Goodbye forever, Manwich.

These joes were fresh, with the use of fresh cut veggies, and spicy. If you’re not a fan of spicy food, I’d recommend you cut out the cayenne pepper altogether. There’s some definite heat to these joeys.

These are going straight into my “make again” file.

Perfect for a hot summer day. I made this a couple of days ago and stuck it in the refrigerator for the week. It was quick and easy to pull out on an evening when heating up the kitchen wasn’t at all appealing.

BP really liked that these sandwiches had a lot of different flavors but none were overpowering. I agree.

As a caution, these are messy. I had sandwich filling falling out all over the place, so it may not be the best choice to serve to a potential employer, or an OCD friend.

Healthy, quick and delicious? Yes!

These open-faced veggie melts are going directly on the Make Again list.

Dad, BP and I all gave these two thumbs up, and the portobellos made the meal super filling, too. This is a great way to get your vegetables.

Little Brother and I gave this a thumbs-up. BP gave it a thumbs-down.

I thought it was a good lunch – fresh, light, tasty. BP just didn’t really care for it.

The meat filling was ground turkey, onion, sauerkraut and a little bit of brown sugar and salt. The sauce consisted of sour cream, mayo, a little bit of ranch dressing, and some chopped tomato and cucumber.

46. grilled turkey reubens

BP claims this sandwich is in his Top 10 list. He loves them and told me that I need to make them “all the time.”

These reubens are a nice twist on the classic sandwich. Instead of thousand island dressing, these have mayo and hot wing sauce. Delicious and perfect for a quick lunch on the weekend, or any day of the week, really.
