111. Twenty-Minute Chicken

If you like mushrooms – and I mean really, really like mushrooms – you’ll like this. It also has a healthy topping of mozzarella cheese on top, and that always makes supper better.

It’s simple and quick to put together, and it tastes good. The name is a bit misleading, in my opinion. I buy big chickens, and it takes longer than 20 minutes for this dish to cook. But, it’s so easy, I don’t mind the extra time.

I served it with a made-from-a-box porcini risotto.

110. pesto chicken and pickled beets

This was very good. We used pesto that I made this summer with basil from BP’s garden, and the beets also were from BP’s garden. It was the first jar we’ve used from our stash.

The chicken dish especially caught my eye because it not only used pesto but it also used pancetta, which is always delicious.

108. French bread pizza

Not your traditional red-sauce pizza, these pizzas have ham, Gruyere (or Swiss) and thyme on top of a honey mustard sauce. Pop them in the oven on a yummy slice of French bread, and you have a pretty good meal.

I served these with a salad and honey mustard dressing – the same salad in the recipe.

107. holiday tortellini soup

Mmmmm … This is a delicious soup recipe, and it’s super easy to throw together. I made this last year on Christmas Eve, and BP requested it again.

It tastes wonderful on a cold December evening. With pasta, cheese, tomatoes and bacon, you really can’t go wrong.

103. go green chicken sammies

When God created the avocado, He knew what He was doing. It is the perfect texture and has just the right flavor to make any meal better.

BP requested these yummy sandwiches, which I had made once before a couple of years ago.

These sandwiches are fresh tasting with a little bit of a kick from the jalapenos, red onion and pepper jack cheese. Definitely a good, fresh meal to enjoy prior to three days of Thanksgiving lunches and suppers coming up this week!

Even though this dish goes together really quickly, it still has that restaurant-quality taste.

100. Colleen’s slow cooker jambalaya

I do not know Colleen, but she makes a mean jambalaya.

This was very good, but mine was definitely too spicy – the kind of spicy that makes your nostrils burn when you smell it.

Next time, I’ll choose a milder sausage and cut down on the cayenne pepper.
