This is perfection on a cold fall evening. And a great way to use carrots that are still hanging out in your garden.

It just screams for a nice crusty baguette to go along with it, but I didn’t think of it until I was already home from work, and I didn’t want to venture back out to the grocery for a $1.29 baguette.

BP and I both had second helpings of this, and we’re looking forward to leftovers tomorrow … and probably the next night, too. (There’s only two of us. We can only eat so much soup.)
