Monday was one of those days when a quick, effortless meal was necessary.

It was the day after Easter, which meant BP and I got home late Sunday evening after a fun day with family, most of my cooking pots and pans needed washed, the countertop and sink both were full of dirty dishes, and I knew meal preparation time Monday evening was going to be short — real short. Plus, because I had so many dirty dishes facing me, I didn’t want to create a lot more work for myself by using more bowls/pots/pans/dishes than necessary.

This slow cooker meal was the perfect solution. Dump some chicken, onion, butter, soup and water in the slow cooker and turn it on. Get home from work, add some biscuits on top, come back an hour later and eat. That’s it.

If healthy eating is your only concern, this is not the meal for you. But if you’re willing to bend the rules occasionally in favor of something quick and easy, then check this out.
