Last week, BP and my schedules were crazy full, and I failed miserably at planning healthy meals for us to enjoy during the 30 minutes of meal time we had on any given night, and so we resorted to pizza and pizza again and leftover pizza and leftover pizza again.

We live beside a pizza shop, and they had a buy-one-get-one special, which we felt was the economical way to go since we could eat the leftovers again and again and again. In hindsight, not such a great idea.

By today, all I really wanted was a good, home-cooked meal. I was excited to get home from work and into the kitchen. It was worth the wait.

With balsamic vinegar and bell peppers, you pretty much can’t go wrong. And this wasn’t wrong. It was so right.

I also made mashed potatoes to go with the chicken and peppers. They were okay, but nothing special – basic boiled potatoes, some cream cheese, salt and pepper.
