95. broiled chicken and steamed broccoli
Okay, so my time spent in the kitchen has been dismal. Life has been busy. Evenings have not been spent at home.
BP and I have resorted to far too many pre-prepared meals than we care to acknowledge.
So, I finally pulled together a home-cooked (though admittedly a little boring) meal that was both (mostly) healthy and tasted good.
I simply broiled the chicken (about 10 minutes each side), which we topped with spicy pineapple rum sauce from The Pampered Chef, and served it alongside pure, classic steamed broccoli.
The pineapple sauce also tastes good poured on top of cream cheese and served with crackers. (And yes, we ate that as a meal one evening recently. It’s something I do not recommend. It’s not good for you.)

I chose this recipe for tonight because I wanted to use up broccoli from our garden, and it was a good choice.
Not only did I get to use two heads of fresh-from-the-garden broccoli, but BP and I also enjoyed a really good supper.
The recipe calls for cavatelli (obviously), but I had rotini so that’s what I used instead. I also added a half cup of the starchy pasta water when I mixed everything together.
My only regret: not inviting anyone over for supper. This made a big skillet full of food. We will be eating this for days.

Two thumbs up from BP. Easy to put together and tasted really good – definitely a family friendly dish!
I served it with wild rice and steamed broccoli.

Dad, BP and I all gave these two thumbs up, and the portobellos made the meal super filling, too. This is a great way to get your vegetables.
