111. Twenty-Minute Chicken

If you like mushrooms – and I mean really, really like mushrooms – you’ll like this. It also has a healthy topping of mozzarella cheese on top, and that always makes supper better.
It’s simple and quick to put together, and it tastes good. The name is a bit misleading, in my opinion. I buy big chickens, and it takes longer than 20 minutes for this dish to cook. But, it’s so easy, I don’t mind the extra time.
I served it with a made-from-a-box porcini risotto.
