111. Twenty-Minute Chicken
Recipe source: Allrecipes.com
If you like mushrooms – and I mean really, really like mushrooms – you’ll like this. It also has a healthy topping of mozzarella cheese on top, and that always makes supper better.
It’s simple and quick to put together, and it tastes good. The name is a bit misleading, in my opinion. I buy big chickens, and it takes longer than 20 minutes for this dish to cook. But, it’s so easy, I don’t mind the extra time.
I served it with a made-from-a-box porcini risotto.
110. pesto chicken and pickled beets
Recipe source: Allrecipes.com for the chicken; SimplyRecipes.com for the beets
This was very good. We used pesto that I made this summer with basil from BP’s garden, and the beets also were from BP’s garden. It was the first jar we’ve used from our stash.
The chicken dish especially caught my eye because it not only used pesto but it also used pancetta, which is always delicious.
109. gingerbread layer dessert
Recipe source: word-of-mouth from an aunt
When I need a quick, simple and impressive-looking dessert to take somewhere around Christmas time, this is my go-to choice. It always goes over really well.
Recipe:
Layer cubed pieces of gingerbread, French vanilla pudding and Cool Whip. Repeat.
108. French bread pizza
Recipe source: Rachael Ray magazine
Not your traditional red-sauce pizza, these pizzas have ham, Gruyere (or Swiss) and thyme on top of a honey mustard sauce. Pop them in the oven on a yummy slice of French bread, and you have a pretty good meal.
I served these with a salad and honey mustard dressing – the same salad in the recipe.
107. holiday tortellini soup
Recipe source: Taste of Home
Mmmmm … This is a delicious soup recipe, and it’s super easy to throw together. I made this last year on Christmas Eve, and BP requested it again.
It tastes wonderful on a cold December evening. With pasta, cheese, tomatoes and bacon, you really can’t go wrong.
106. sweet potato casserole
Recipe source: Allrecipes.com
Go ahead and put this one on the dessert table. It was very good, but wow, it was sweet. I could have skipped the pumpkin pie (but I’d already baked it, so we ate it, too!).
105. corn casserole
Recipe source: Allrecipes.com
This was a good, classic corn casserole. It had a nice corn bread consistency – not runny or soupy at all.
104. pumpkin pie
Recipe source: Libby
Tomorrow, BP and I are hosting a Thanksgiving supper for Little Brother and Dad.
Little Brother requested pumpkin pie, and you can’t go wrong with the classic Libby recipe.
Last year, I attempted a pumpkin-pecan pie. It was less than successful. This year, I’m sticking with basics!
103. go green chicken sammies
Recipe source: Rachael Ray magazine
When God created the avocado, He knew what He was doing. It is the perfect texture and has just the right flavor to make any meal better.
BP requested these yummy sandwiches, which I had made once before a couple of years ago.
These sandwiches are fresh tasting with a little bit of a kick from the jalapenos, red onion and pepper jack cheese. Definitely a good, fresh meal to enjoy prior to three days of Thanksgiving lunches and suppers coming up this week!
102. Betty Crocker meat loaf
Recipe source: Betty Crocker
When I asked BP what he was hungry for last week, he requested meat loaf.
I don’t have a photo of it because I made it for him and popped it in the oven before leaving for the evening.
It must have been pretty good because it looked like he had seconds!
